About this recipe

This avocado chocolate pudding is a creation that arose from the need to turn healthy ingredients into something delicious. I remember one day having an overripe avocado that I didn't want to throw away. At the same time, I was in the mood for chocolate, but didn't want to resort to unhealthy alternatives. That's how the idea of combining the creamy texture of avocado with the intense flavor of cocoa came about. The result was surprisingly good and has since become one of my favorite snacks. The ingredients all play an important role. The avocado is the base and provides the incredibly creamy texture without the need for cream or other fatty ingredients. It provides healthy fats and makes the pudding satisfying. The banana contributes sweetness and a slightly fruity note that harmonizes perfectly with the avocado. Be sure to use a ripe banana, as it is sweeter and easier to puree. The shredded coconut adds a touch of the exotic and a light texture to the pudding. If you don't like shredded coconut, you can leave it out or replace it with chopped nuts. The cocoa powder is of course responsible for the chocolate flavor. I recommend using a high-quality, unsweetened cocoa powder to achieve the best flavor. The agave syrup serves as a sweetener. But you can also use other alternatives such as maple syrup, honey (not vegan) or date syrup, depending on your personal preference. The preparation in the Thermomix® is very simple. First, make sure your avocado is really ripe. It should give way to light pressure. Halve the avocado, remove the pit and use a spoon to remove the flesh from the peel. Peel the banana and cut into coarse pieces so that the Thermomix® can puree it more easily. Then put all the ingredients in the mixing bowl. I recommend adding the liquid ingredients (agave syrup) first and then the solid ingredients (avocado, banana, shredded coconut, cocoa powder). This will make everything mix more evenly. Set the Thermomix® to level 5-7 and puree the ingredients for about 20-30 seconds until a smooth, creamy mass is formed. If the pudding is too thick, you can add a dash of plant-based milk (e.g. almond milk or coconut milk). For a vegetarian version, you can replace the agave syrup with honey. If you like it a little spicier, you can add a pinch of cinnamon, cardamom or chili. For a nutty note, chopped almonds, hazelnuts or walnuts are suitable as a topping. The avocado chocolate pudding tastes very good on its own, but it can also be served wonderfully with various toppings and side dishes. Fresh berries such as raspberries, strawberries or blueberries go perfectly with it. A few chocolate chips or cocoa nibs also provide an extra crunch. If you like it a little more decadent, you can add a dollop of coconut cream or vegan whipped cream. The pudding can be prepared well and stored in the refrigerator. It will keep there for about 1-2 days. However, the avocado can oxidize slightly over time and the pudding can take on a brownish color. However, this does not affect the taste. To slow down oxidation, you can cover the pudding with plastic wrap and place it directly on the surface.
