Description

These oat and tuna croquettes are a delicious and nutritious option for a quick lunch or a light dinner. The oats give it a soft texture and a slightly sweet flavor that perfectly complements the tuna. I prepare them often because they are very easy to make and my children love them. In addition, they can be baked instead of fried for a healthier option. They are perfect for taking advantage of ingredients that you already have at home! Try them with a fresh salad for a complete and balanced meal. I assure you that you will love them!

Ingredients (9 ingredients)

  • 2 tazas oats
  • 0.5 cup milk
  • 120 mililitros milk
  • 2 piece egg whites
  • 1 piece egg yolk
  • 1 rama chopped parsley
  • 1 pinch salt
  • 200 gramos tuna
  • oil

Preparation (6 steps)

Soak the oats

In a bowl, soak 2 cups of oats with ½ cup (120 ml) of milk for at least 20 minutes. For a better texture, you can soak the oats a day before.

Mix the ingredients

In a separate container, mix 200 grams of tuna (well drained if canned) with 2 egg whites, 1 egg yolk, 1 sprig of chopped parsley and 1 pinch of salt. Mix well until all ingredients are integrated.

Integrate the oats

Add the soaked oats to the tuna mixture and mix again until a uniform paste is obtained. If the oats are very watery, drain them a little. If you want a finer texture, place the soaked oats in the Thermomix glass and crush 5 seconds/speed 5.

Form the croquettes

With the tuna and oat mixture, form small balls with your hands. Press lightly to flatten them a little.

Fry the croquettes

Heat a little oil in a pan over medium heat. Fry the croquettes on both sides until golden brown. Alternatively, you can bake them on a tray with a little spray oil at 180°C for 15-20 minutes.

Serve

Serve the hot tuna and oat croquettes, accompanied by a fresh salad.
