Description

"Plum Streusel Casserole" relies on plums, bourbon vanilla sugar, flour type 405, sugar, butter, very cold for a harmonious aroma. The dish is ready to serve in about 40 minutes. Ingredients (10 ingredients)

  • 750 g Plums
  • 1 Päck. Bourbon vanilla sugar
  • 150 g Flour Type 405
  • 100 g Sugar
  • 100 g Butter, very cold
  • 20 g Oat flakes
  • 0.5 tsp Cinnamon powder
  • 1 pinch Salt
  • 1 tbsp Powdered sugar
  • Butter for the mold

Preparation (7 steps)

Preheat oven and prepare mold

Preheat the oven to 200 °C (convection oven 180 °C) in good time. Grease an ovenproof casserole dish with approx. 24 cm Ø (or several small molds with approx. 8-10 cm Ø) generously with butter.

Prepare plums

Wash, pit and halve the 750 g plums. Place the halved plums in a bowl and mix with 1 packet of bourbon vanilla sugar.

Prepare streusel

Put 150 g flour, 100 g sugar, 100 g very cold butter in pieces, 20 g oat flakes, 1/2 tsp cinnamon powder and 1 pinch of salt into the mixing bowl.

Make streusel

Process the ingredients in the mixing bowl for 20 sec/speed 4 to make streusel. If necessary, use the spatula to push down from the edge and repeat the process.

Fill casserole dish

Place the prepared plums in the greased casserole dish and spread the streusel evenly over them.

Baking

Bake the casserole dish on the middle rack in the preheated oven for approx. 25 to 30 minutes until the streusel is golden brown.

Decorate and Serve

Sprinkle the baked plum crumble with approx. 1 tbsp powdered sugar immediately after baking so that it melts and caramelizes slightly. Serve warm with whipped cream or a scoop of ice cream.

My grandmother had a huge plum tree in the garden, and in late summer there was nothing better than picking the ripe fruit with her and using it to conjure up delicious cakes and this casserole. The warmth of the oven, the scent of cinnamon and plums - these are memories that you just don't forget. The ingredients play a crucial role. The plums, preferably fully ripe and juicy, bring the fruity sweetness and a slight acidity to the casserole. The bourbon vanilla sugar underlines the aroma of the plums and gives them a fine, caramel-like note. For the streusel, flour type 405 is ideal, as it ensures a loose and crumbly texture. The sugar contributes the sweetness, while the very cold butter in pieces is responsible for the streusel becoming nice and crispy. The oat flakes give the streusel an additional bite and a slightly nutty note. Cinnamon powder and a pinch of salt round off the taste profile and ensure a harmonious balance. The preparation with the Thermomix® is very simple. It is important that the butter is really very cold so that the streusel does not stick together to form a dough. If the streusel is still too coarse after the first mixing, you can simply repeat the process briefly. Make sure not to overfill the mixing bowl so that the ingredients can be processed evenly. The recipe is already ideally suited for a vegetarian version. If you like it vegan, you can replace the butter with a vegetable margarine. You can also vary the spices. Instead of cinnamon, cardamom or a pinch of nutmeg also go perfectly with plums. If you like, you can also add some grated lemon zest to the streusel to give them a fresh note. It is best to serve the plum streusel casserole warm, straight from the oven. A scoop of vanilla ice cream or a dollop of freshly whipped cream goes perfectly with it. If you like it a little lighter, you can also serve plain yogurt or quark with it. A few fresh mint leaves or a lemon zest as decoration make the dish a real eye-catcher. Leftovers of the plum streusel casserole can be stored in the refrigerator. Before serving, they can either be warmed up in the oven or in the microwave. The casserole can also be prepared well in advance. The plums can be prepared the day before and mixed with vanilla sugar. The streusel can also be prepared and stored in the refrigerator. Shortly before baking, the plums are placed in the mold and covered with the streusel.
