Description

This Mexican fish dish is a recipe that I have been perfecting for years. The fish fillets, cooked in a fresh tomato and coriander sauce, are simply delicious. The recipe is very easy to prepare and is perfect for a quick weeknight dinner. The touch of serrano chilli (optional) gives it a spicy point that I personally love, but you can omit it if you prefer a milder flavour. I hope you enjoy this recipe as much as I do!

Ingredients (8 ingredients)

  • 4 piece fish fillets
  • 3 piece red tomatoes
  • 0.25 piece onion
  • 1 bunch coriander
  • 1 chorrito oil
  • 1 piece serrano chilli (optional)
  • 1 pinch salt
  • 1 pinch pepper

Preparation (5 steps)

Chop the vegetables

Wash and disinfect the tomatoes, onion and coriander. Cut the tomatoes into quarters and the onion into pieces. Introduce the tomatoes and onion into the bowl and chop 5 sec./Stufe 5. Add the coriander and chop 3 sec./Stufe 4.

Fry the vegetables

Add a dash of oil to the bowl. Program 3 Min./120°C/Stufe 1. If desired, add the chopped serrano chilli to the bowl during the last minute.

Add the fish

Thermomix® Setting
5 min/212°F/Speed 1 100

Cut the fish fillets into medium portions. Make a hole in the centre of the bowl and add the fish fillets. Season with salt and pepper to taste. Cover the bowl and program 5 Min./100°C/Stufe 1.

Cook the fish

5 min/212°F/Speed 1 100

Turn the fish fillets carefully. Cover the bowl and program 5 Min./100°C/Stufe 1.

Add the coriander and serve

Thermomix® Setting
1 min/212°F/Gentle stir speed 100

Sprinkle the chopped coriander over the fish. Stir carefully with the spatula so that the fish does not fall apart. Program 1 Min./100°C/Sanftrührstufe so that the coriander does not turn dark. Serve immediately.
