Description

This Malaga ice cream is a true triumph of flavors! The sweetness of the ice cream blends perfectly with the rum-soaked raisins, creating a delicious contrast. Ingredients (7 ingredients)

  • 500 ml Whole milk
  • 250 ml Fresh cream
  • 120 g Sugar
  • 100 g Raisins
  • 50 g Dark rum
  • 4 piece Egg yolks
  • 1 tsp Vanilla extract

Soaking the raisins

Pour 100 g of raisins into a bowl, add 50 g of dark rum, or as much as needed to completely cover the raisins, and let them soak until ready to use. This step does not require the use of the Thermomix.

Heat the milk with vanilla

Pour 500 ml of whole milk into the Thermomix bowl, add 1 teaspoon of vanilla extract and heat for 8 Min./90°C/Stufe 2.

Prepare the egg and sugar mixture

In a bowl, beat 4 egg yolks with 120 g of sugar until you get a frothy and homogeneous mixture. This step does not require the use of the Thermomix.

Cook the custard

Thermomix® Setting
12 min/185°F/Speed 2 85

Add the egg and sugar mixture to the bowl with the flavored milk. Cook for 12 Min./85°C/Stufe 2, stirring gently with a spatula to prevent it from sticking to the bottom.

Cool the cream

Transfer the cream to a bowl and let it cool to room temperature. Then, store it in the refrigerator for at least 2 hours. This step does not require the use of the Thermomix.

Mix the cream

After resting in the refrigerator, pour the cooled cream into the Thermomix bowl, add 250 ml of cold fresh cream from the refrigerator and mix for 20 Sek./Stufe 3.

Churn the ice cream

Transfer the cream to the ice cream maker and churn following the manufacturer's instructions. This step does not require the use of the Thermomix.

Add the raisins

When the ice cream is almost ready, add the well-squeezed raisins directly into the ice cream maker and let it mix for about 1 Min./Stufe 1. This step does not require the use of the Thermomix.
