Description

This basic seitan recipe is a real all-rounder in vegan cuisine! I've been making it for a while now and am always amazed at how versatile it is. Whether as a goulash, schnitzel or minced meat substitute - the homemade seitan is a great source of protein. The preparation takes a little time, but the effort is worth it, as you can prepare the seitan well and keep it in the refrigerator or even freeze it. Perfect for anyone who eats a vegan or vegetarian diet and is looking for a tasty alternative to meat. It can always be varied with different spices!

Ingredients (11 ingredients)

  • 250 g Gluten
  • 250 g Water very cold
  • 1 tbsp Soy sauce
  • 1 tsp Sea salt
  • 1 tsp Sweet paprika powder
  • 1 tsp Turmeric
  • 1 tsp Hot curry powder
  • 0.25 tsp Garlic granules
  • 1.7 Liter Vegetable broth preferably yeast-free
  • 0.5 Tube/n Tomato paste approx. 100 g
  • 4 tbsp Soy sauce

Mix dry ingredients

Put 250 g gluten, 1 tsp sea salt, 1 tsp sweet paprika powder, 1 tsp turmeric, 1 tsp hot curry powder and 0.25 tsp garlic granules into the mixing bowl and mix for 10 sec/speed 4.

Add and knead in liquid ingredients

Add 250 g very cold water and 1 tbsp soy sauce to the dry ingredients in the mixing bowl and process into an elastic mass for 2 min/kneading stage. If necessary, add a little more cold water if the mass is too crumbly.

Prepare cooking broth

Put 1.7 liters of vegetable broth, 0.5 tube of tomato paste (approx. 100 g) and 4 tbsp of soy sauce into the mixing bowl and heat for 10 min/100°C/speed 1.

Shape seitan and add to cooking broth

Bring the seitan into the desired shape, e.g. cut into cubes or slices. Not too large, as they are about twice as large after cooking. Add the seitan pieces to the hot cooking broth in the mixing bowl and stir once with the spatula so that they do not stick together and the broth gets to all sides of the seitan.

Cook seitan

Put on the mixing bowl lid and simmer the seitan for 30 min/100°C/speed 1.

Fill and preserve seitan

Distribute the still hot seitan with the broth to approx. 3 large screw-top jars to the brim, close tightly and turn upside down for 5 minutes. It is best to leave it in the refrigerator for 1-2 days before first use. If necessary, you can of course use the seitan immediately.

About this recipe

Seitan, also known as wheat meat, is more than just a meat substitute for me. I still remember my first attempts to make it myself. It was quite a challenge to get the consistency right, but the effort was worth it. Today, seitan is an integral part of my kitchen, and this recipe with the Thermomix® makes preparation incredibly easy. The secret to good seitan lies in the ingredients. Gluten, the wheat protein, is the base and provides the meat-like texture. The cold water is important so that the gluten is not activated too quickly and the dough remains smooth. The soy sauce adds spice and umami to the seitan. The spices - sea salt, sweet paprika powder, turmeric, curry and garlic granules - give the seitan a pleasant, slightly spicy note. Turmeric also provides a beautiful yellowish color. The vegetable broth forms the basis for the cooking broth and gives the seitan flavor during cooking. Tomato paste and soy sauce in the cooking broth intensify the flavor and provide a beautiful color. When preparing with the Thermomix®, it is important to mix the dry ingredients well before adding the water. Kneading in the kneading stage is crucial to obtain an elastic mass. If the dough is too dry, you can carefully add a little more cold water. When shaping the seitan, you should remember that it will rise a little during cooking. Therefore, it is better to form smaller pieces. Cooking in the Thermomix® is very easy: simply add the seitan to the hot cooking broth and simmer. Seitan is incredibly versatile. You can enjoy it pure, marinate it or braise it in sauces. For a vegetarian version, you can use normal vegetable broth instead of yeast-free vegetable broth. If you like it spicier, you can add chili powder or cayenne pepper. Smoked paprika powder or herbs such as thyme and rosemary also go very well. Potatoes, rice, pasta or vegetables are suitable as side dishes. Seitan strips in cream sauce with spaetzle is a classic, but it also makes a good figure as a burger patty or in a curry. The seitan can be prepared and stored very well. It can be kept in the refrigerator in jars for several weeks. It can also be frozen in portions. Before use, it should then be thawed slowly in the refrigerator. This way you always have a delicious and protein-rich meat substitute at hand.
