Description

This hearty zucchini lasagna with schnitzel is an absolute highlight! I especially like to make it in the summer when the zucchini is fresh from the garden. The combination of tender schnitzel, juicy tomatoes, and creamy sauce is simply unbeatable. The zucchini makes the lasagna nice and light and digestible. A great dish for the whole family that can also be prepared well in advance. If you like, you can add some fresh basil. Tastes good warm or cold!

Ingredients (13 ingredients)

  • 600 g Zucchini
  • 500 g Tomatoes
  • 0.5 bunch Oregano
  • 10 piece Pork schnitzel
  • 2 tbsp Olive oil
  • to taste Salt
  • to taste Black pepper
  • 30 g Butter or margarine
  • 40 g Flour
  • 250 ml Milk
  • 2 tsp Vegetable broth (instant)
  • 150 g Grated Gouda cheese
  • 150 g Lasagna sheets

Preparation (9 steps)

Prepare zucchini and tomatoes

Wash and clean zucchini and tomatoes. Cut zucchini lengthwise into strips. Cut tomatoes into slices. Wash oregano, pat dry, set aside some for garnish. Finely chop the rest and set aside.

Chop oregano

Put the remaining oregano in the mixing bowl and chop for 3 sec./speed 8. Transfer and set aside.

Prepare schnitzel

Wash schnitzel and pat dry. Heat oil in a large pan, fry schnitzel in it for 1-2 minutes on each side. Season with salt and pepper and remove.

Prepare roux

Put butter or margarine in the mixing bowl and melt for 3 min./50°C/speed 2.

Prepare sauce

Add flour and sauté for 2 min./100°C/speed 2.

Finish sauce

Add water and milk and gradually pour in while stirring for 8 min./90°C/speed 3. Stir in vegetable broth.

Stir in cheese and oregano

Thermomix® Setting

Add 75 g grated Gouda cheese and the chopped oregano and stir in for 1 min./60°C/speed 2. Season with pepper and salt.

Layer lasagna

Grease a casserole dish, put some sauce in the dish and spread. Place lasagna sheets on top. Layer zucchini, schnitzel, tomatoes, sauce and lasagna sheets in the dish, always seasoning the zucchini and tomatoes with salt and pepper.

Bake lasagna

Sprinkle with 75 g cheese. Bake in a preheated oven (electric oven: 200 °C/ convection oven: 175 °C/ gas: level 3) for 35-40 minutes. Serve garnished with remaining oregano.

This zucchini lasagna with schnitzel is a creation that arose from the desire to combine classic Italian cuisine with down-to-earth home cooking. I was inspired by my grandma, who always conjured up an incredible lasagna, but also by my love for juicy schnitzel. This gave rise to the idea of combining both and complementing them with the light note of zucchini. The zucchini plays an important role in this dish. It provides a pleasant freshness and lightness, which makes the lasagna an ideal dish, especially in summer. The tomatoes add a fruity acidity that harmonizes perfectly with the hearty taste of the schnitzel. The oregano, both fresh and dried, gives the lasagna a Mediterranean touch and underlines the aromas of the other ingredients. The pork schnitzel provides the filling component and a hearty taste. The Gouda cheese melts wonderfully and provides a creamy consistency and a golden brown crust. When preparing in the Thermomix®, it is important to stir the roux carefully to avoid lumps. The temperature of 50°C when melting the butter is ideal to prevent burning. When sautéing the flour, it is important not to exceed the temperature of 100°C, otherwise the flour may burn. The milk and water should be added slowly while stirring to obtain a homogeneous sauce. For a vegetarian version, the schnitzel can be replaced with fried eggplant slices or tofu. For a vegan version, a vegan cheese alternative can be used instead of cheese and the milk can be replaced with plant-based milk. Instead of oregano, other herbs such as basil, thyme or rosemary can also be used. The zucchini lasagna with schnitzel tastes best warm, but can also be enjoyed cold. It goes well with a fresh salad with a light vinegar-oil dressing. A glass of dry red wine also goes well with the dish. The lasagna can be prepared well in advance. It can be layered the day before and then stored in the refrigerator. Before baking, it should then stand at room temperature for about 30 minutes. Leftovers of the lasagna can be stored in the refrigerator and consumed within 2-3 days. It can also be frozen well.
