Description

I love preparing this pasta with pistachio pesto! It is a dish that immediately brings to mind the flavors of Sicily. The homemade pesto with fresh pistachios is creamy and fragrant, and the crispy cheek lard adds an irresistible savory note. The preparation is really simple and quick, perfect for an impromptu dinner or a Sunday lunch with the family. If you can't find the cheek lard, you can also use diced smoked bacon. A tip? Add a sprinkle of grated Parmesan before serving, for an extra touch of flavor!

  • 320 g linguine
  • 150 g shelled pistachios
  • 60 ml extra virgin olive oil
  • 2 tbsp water
  • 100 g cheek lard in stick
  • fine salt

Preparation of pistachio pesto

Put 150 g of shelled pistachios, 60 ml of extra virgin olive oil, 2 tablespoons of water and fine salt to taste in the bowl. Close the bowl and chop finely to obtain a homogeneous pesto. 20 Sec./Stufe 8.

Brown the cheek lard

Cut 100 g of cheek lard into strips. In a non-stick pan, pour a drizzle of extra virgin olive oil and brown the cheek lard over medium heat for about 5 minutes, until it becomes crispy. Set aside.

Cook the pasta

Bring abundant salted water to a boil in a pot. Cook 320 g of linguine al dente according to the instructions on the package.

Mix the pasta with the sauce

Drain the pasta al dente and pour it into the pan with the crispy cheek lard. Add the pistachio pesto and a ladle of pasta cooking water. Mix well to combine the linguine with the sauce.

Serve

Plate and serve the pasta with pistachio pesto and crispy cheek lard immediately, hot and steaming.
