Description

This melting chicken with parmesan cream and crispy ham is a comforting and tasty dish, perfect for autumn evenings or festive meals. I often prepare it for my friends and family, and it's always a hit! The creamy parmesan sauce delicately coats the chicken, while the crispy Parma ham adds an irresistible touch of indulgence. It's a relatively simple dish to make, but it impresses with its rich flavors and melting texture. Accompanied by fresh pasta or mashed potatoes, it's a real treat. Feel free to add some seasonal vegetables for an even more complete dish. A real treat for the taste buds!

Ingredients (14 ingredients)

  • 8 piece chicken thighs
  • 20 g butter
  • 1 brin fresh thyme
  • 3 slice Parma ham
  • 4 pinch mill pepper
  • 2 piece shallots
  • 500 g thick fresh cream
  • 100 g grated parmesan
  • 3 slice Parma ham
  • 25 cl vegetable stock
  • 2 pinch salt or fine salt
  • 2 pinch black pepper
  • 1 brin rosemary
  • 1 brin thyme

Preparation (9 steps)

Preparation of chicken thighs

Using a meat knife, remove excess skin from the chicken thighs. This step is important to achieve crispy skin when cooking.

Cooking the chicken

Melt 20 g of butter in a non-stick frying pan. Add the 8 chicken thighs. Sauté them over high heat for 10 minutes, turning them on all sides, until the skin is golden brown. Remove the chicken thighs from the pan, set aside warm in a plate, cover with aluminum foil.

Preparation of shallots

Peel 2 shallots, cut them in half and put them in the Thermomix bowl. Finely chop them for 3 Sec./Stufe 5.

Cooking shallots and ham

Add the rosemary, thyme and 3 slices of Parma ham cut into small pieces in the Thermomix bowl. Sauté everything for 5 Min./120°C/Stufe 1.

Preparation of the sauce

10 min/194°F/Speed 2 90

Add 500 g of thick fresh cream, 25 cl of vegetable stock and 100 g of grated parmesan in the Thermomix bowl. Pepper with 4 pinches of mill pepper, salt with 2 pinches of salt or fine salt and add 2 pinches of black pepper. Let simmer everything for 10 Min./90°C/Stufe 2.

Mixing the sauce

20 sec/Speed 8

Remove the rosemary and thyme. Mix the sauce for 20 Sek./Stufe 8. Adjust the salt seasoning of the sauce if necessary.

Final cooking of the chicken

35 min/194°F/Linkslauf Speed 1 90 Reverse

Put the chicken thighs back into the Thermomix bowl with the sauce. Cook them for 35 Min./90°C/Linkslauf Stufe 1, until the chicken is completely cooked and the sauce is smooth and thick.

Preparation of crispy ham

While the chicken is cooking, heat a small non-stick frying pan. Put the 3 slices of Parma ham for the chicken in the pan, grill them for a few minutes, until they become crispy. Drain them on absorbent paper, let them cool, then crumble them coarsely.

Service

Just before serving, sprinkle the chicken with the crumbled crispy Parma ham and thyme. Add a turn of mill pepper. Serve hot.
