About this recipe

The Noodle Tuna Casserole is a dish that brings back childhood memories for me. My mother often cooked it when things had to be done quickly and the fridge didn't have much to offer. It was always a guarantee of a warm, filling meal that the whole family liked. The simplicity of the recipe belies its surprisingly full flavour. The ingredients are deliberately kept simple, but each one contributes to the overall result. The onion forms the aromatic base. It is finely chopped in the Thermomix®, which ensures even distribution and a mild aroma. The tuna, preferably in its own juice, provides the protein-rich heart of the dish. Make sure to use high-quality tuna, as the flavour really shines through here. The chopped canned tomatoes provide a fruity acidity and a pleasant sauce. It is best to use chopped tomatoes, as they offer more texture. The noodles, ideally short varieties such as penne or fusilli, soak up the sauce and make the pot nice and creamy. The vegetable stock serves as a cooking liquid and gives the dish an additional flavour dimension. And finally the basil, which with its fresh note provides a nice counterpoint to the hearty aromas. Frozen chopped basil is a practical option here, as it is always available. When preparing it in the Thermomix®, it is important not to cook the noodles for too long, otherwise they will become mushy. The specified time of 10 minutes is a guideline that may vary depending on the type of pasta. It is best to try it after 8 minutes to check the degree of cooking. Stirring occasionally with the spatula through the lid opening prevents the noodles from sticking to the bottom of the mixing bowl. If you find that the sauce is getting too thick, you can add a little more vegetable stock during cooking. The Noodle Tuna Casserole can be varied wonderfully. For a vegetarian version, you can replace the tuna with chickpeas or white beans. To give the dish a vegan touch, use a vegetable broth and make sure that the noodles do not contain any eggs. You can also experiment with different spices. Garlic, chilli or oregano go perfectly with this dish. A dash of lemon juice at the end brings additional freshness. It is best to serve the Noodle Tuna Casserole warm, straight from the Thermomix®. A fresh salad goes well with it. If you like, you can sprinkle some grated Parmesan or Pecorino over it. Leftovers of the Noodle Tuna Casserole can be easily stored in the refrigerator and warmed up the next day. You can also prepare the dish well in advance and store it in the refrigerator until you want to cook it. Then simply put all the ingredients in the Thermomix® and extend the cooking time by a few minutes.
