Description

This creamy pasta dish with rocket pesto is a real treat! I love how quick and easy it is to prepare – perfect for a quick lunch or an uncomplicated dinner. The fresh, slightly peppery taste of the rocket harmonizes wonderfully with the Parmesan and pine nuts. A dash of cooking water makes the pesto particularly creamy. If you like, you can sprinkle some more cheese on top. An absolute favorite recipe that is always well received!

Ingredients (8 ingredients)

  • 320 g pasta
  • 150 g rocket
  • 30 g pine nuts
  • 40 g grated cheese
  • 1 clove garlic
  • 60 ml olive oil
  • 1 q.b. pepper
  • 1 q.b. fine salt

Preparation (5 steps)

Prepare pesto

Thermomix® Setting
30 sec/Speed 8

Put 150 g rocket, 40 g grated cheese, 30 g pine nuts, 1 clove of garlic, 60 ml olive oil, salt and pepper to taste in the mixing bowl and process into a pesto for 20 sec/speed 8. If necessary, scrape down the edge with the spatula and puree again for 10 sec/speed 8 until a smooth and creamy consistency is achieved.

Pour pesto

Pour the finished pesto into a bowl and set aside.

Cook pasta

Bring plenty of water to a boil in a saucepan, add salt and cook 320 g pasta according to the package instructions.

Mix pasta and pesto

Drain the pasta, collecting some of the cooking water. Put the pasta directly into a bowl, add the rocket pesto and stir in a dash of cooking water until a creamy consistency is achieved. Add more cooking water if necessary.

Serve

Arrange the pasta on plates and garnish with grated cheese, pine nuts and fresh rocket leaves. Serve immediately.
