Description

This redcurrant cream is a wonderfully refreshing treat for warm summer days! The combination of tart redcurrants, creamy mascarpone and crispy wafer rolls is simply irresistible. I like to make this cream when I need something quick and still want to serve something special. Preparation with the Thermomix® is child's play and done in no time at all. Perfect as a light dessert or for spontaneous afternoon visits. The cream can also be prepared well in advance and stored in the refrigerator.

Ingredients (5 ingredients)

  • 150 g Black redcurrants
  • 5 tbsp Icing sugar
  • 200 g Mascarpone
  • 250 g Whipping cream
  • 6 piece Wafer rolls

Preparation (5 steps)

Purée redcurrants

Thermomix® Setting
20 sec/Speed 8

Pick through, wash and pluck 150 g of black redcurrants from the stems. Place the redcurrants in the mixing bowl with 1.5 tbsp icing sugar and 2 tbsp cold water and purée for 20 sec/speed 8. Then pour the purée into another bowl and clean the mixing bowl.

Stir mascarpone

Thermomix® Setting
20 sec/Speed 3

Put 200 g mascarpone and 3.5 tbsp icing sugar into the mixing bowl and stir for 20 sec/speed 3. Use the spatula to push down from the edge and stir for another 10 sec/speed 3.

Whip cream until stiff

Thermomix® Setting
2 min/Speed 3,5

Place 250 g whipping cream in the mixing bowl and whip until stiff with the butterfly for 2 min/speed 3.5. Remove the butterfly.

Refine cream

Carefully fold the stiffly whipped cream into the mascarpone cream. Swirl half of the redcurrant purée into the cream.

Layer cream and serve

Pour the remaining redcurrant purée into glasses alternately with the cream. Roughly chop 6-8 wafer rolls and sprinkle over before serving.
