Description

This recipe for redfish fillet in almond crust is a real treat! The tender fish fillets are coated with a crispy almond-egg breading and fried in the pan until golden brown. The almond flakes give the fish a great texture and a slightly nutty taste. A squeeze of lemon juice provides the necessary freshness. The dish is quick to prepare and is perfect for a festive dinner or a special lunch. It goes well with asparagus, Hollandaise sauce and parsley potatoes.

Ingredients (9 ingredients)

  • 6 piece Redfish fillet(s) fresh or frozen
  • 1 tbsp Lemon juice
  • Salt
  • Pepper
  • Paprika powder, sweet
  • 2 tbsp Flour
  • 1 piece Egg(s)
  • 4 tbsp Breadcrumbs
  • 1 Handvoll Almond flakes

Preparation (5 steps)

Prepare redfish

Wash the redfish fillets, dry them and drizzle with lemon juice (if frozen, let them thaw beforehand). Season the fillets on both sides with salt, pepper and paprika powder and dust with flour. No Thermomix setting required.

Whisk egg

Put the egg in the mixing bowl and whisk for 10 sec./speed 3. Then pour into a bowl.

Prepare breadcrumb-almond mixture

Thermomix® Setting

Put the breadcrumbs and almond flakes in the mixing bowl and chop for 5 sec./speed 5. Then pour into a bowl.

Bread the fish

Then first turn the fish in the whisked egg and finally in the breadcrumb-almond mixture. No Thermomix setting required.

Fry fish

Bake the fish fillets in a pan with hot palm fat on each side for approx. 4 minutes until golden yellow. No Thermomix setting required.
