Description

This watermelon-lime-drink is the perfect thirst quencher for hot summer days! I love making it when I need something quick and refreshing. The sweetness of the watermelon harmonizes wonderfully with the acidity of the lime. A splash of mineral water makes the whole thing even more sparkling. If you like, you can add a few mint leaves. The recipe is super easy and quick to prepare in the Thermomix®. Ideal for a small refreshment in between or as an accompaniment to grilling. And the best thing: it is also vegan!

About this recipe

This watermelon-lime-drink is the epitome of summer for me. I associate it with carefree afternoons in the garden, the scent of sunscreen and the laughter of friends. My grandma used to have a huge watermelon in the fridge, from which she conjured up such refreshing drinks for us children. Of course, without Thermomix®, but the memory has remained and I have perfected the recipe over time. The watermelon is of course the star of this drink. It provides the sweetness and juicy texture. Be sure to choose a ripe watermelon. It should feel heavy and sound hollow when tapped. The lime brings the acidity into play, which makes the drink so refreshing. It is best to use freshly squeezed lime juice, as it is more aromatic than juice from the bottle. The ice cubes provide the necessary coldness and the mineral water makes the whole thing sparkling and light. When preparing in the Thermomix®, it is important not to puree the watermelon for too long, otherwise it will become too frothy. 20 seconds on speed 8 is ideal. If you don't have speed 8, you can also puree for a little longer on a lower speed. Make sure that the mixing bowl is clean before you put the watermelon in it, so that the drink is not contaminated. After pureeing the watermelon and adding the lime juice, you should serve the drink immediately, otherwise it will lose color and taste. This drink is naturally vegan and gluten-free. But you can also vary it very easily. For a slightly more exotic note, you can puree a few leaves of fresh mint or basil. Even a small piece of ginger provides a pleasant spiciness. If you like it a little sweeter, you can add a small dash of agave syrup or maple syrup. For an alcoholic version, you can add a shot of white rum or vodka. It is best to serve the watermelon-lime-drink ice-cold in tall glasses. A slice of watermelon on the rim of the glass looks visually appealing. Light snacks such as olives, feta cheese or a few grissini go well with it. A piece of watermelon or melon also goes perfectly with it. The drink is ideal as an aperitif before grilling or as a refreshment in between on hot days. The watermelon-lime-drink is best prepared fresh and served immediately. If you want to prepare it in advance, you can puree the watermelon and add the lime juice, but only add the ice cubes and mineral water shortly before serving. The pureed watermelon can be stored in the refrigerator for a maximum of one day.
