Description

This radicchio salad with broccoli and sprouts is a crunchy, fresh delight that is perfect as a light meal or side dish. The slightly bitter radicchio harmonizes wonderfully with the mild broccoli and fresh sprouts. A carrot provides a pleasant sweetness and bite. The dressing of white wine vinegar and olive oil perfectly rounds off the salad. Ideal for those who like it healthy and uncomplicated!   • 1 piece Carrot(s)
  • 1 piece small Onion(s)
  • SproutsLentil sprouts
  • 1 tbsp White wine vinegar

Prepare broccoli

Add 500 ml water to the mixing bowl and heat for 5 min./Varoma/speed 1.

Cook broccoli

Clean the broccoli and divide into florets, cut the stalk into small pieces. Place the broccoli stalk in the steamer basket and insert into the mixing bowl. Steam for 2 min./Varoma/speed 1. Then place the broccoli florets on the stalk and steam for another 2 min./Varoma/speed 1. Remove the broccoli from the mixing bowl and set aside.

Prepare vegetables

Wash radicchio and tear or cut the leaves into pieces. Clean the carrot, cut into small pieces or cut into fine slices with a vegetable peeler. Wash and drain sprouts. Peel onion and cut finely. Put everything in a bowl.

Prepare dressing

Add 1 tbsp white wine vinegar, 2 tbsp olive oil, salt and pepper to the mixing bowl and mix for 10 sec./speed 3.

The slightly bitter note of the radicchio, paired with the sweetness of the carrots and the freshness of the sprouts, is simply unbeatable. The radicchio, with its purple-red leaves, is not only an eye-catcher, but also a taste experience. Its slightly bitter note forms a wonderful contrast to the other ingredients. The broccoli, with its mild, slightly sweet taste, provides a pleasant texture and provides important nutrients. The carrot brings a crunchy sweetness to the salad and the onion provides a slight sharpness that perfectly complements the dressing. The sprouts, in this case lentil sprouts, contribute an additional freshness and a slightly nutty taste. The preparation with the Thermomix® is very simple and saves time. Pre-cooking the broccoli in the Varoma is ideal, as it remains crunchy and its valuable ingredients are preserved. Be careful not to cook the broccoli for too long, otherwise it will become mushy. The cooking time may vary depending on the size of the florets. It is recommended to taste the broccoli after the first cooking time and, if necessary, cook it a little longer.
