Description

This fried salmon with quinoa and vegetables is a protein-rich and gluten-free main course that is quick to prepare with the Thermomix®. The main ingredients are salmon, quinoa, peppers, zucchini and cherry tomatoes. In just 35 minutes, a healthy and Mediterranean meal for 2 people is created. Ideal for light cuisine or after a workout.

  • 125 g Quinoa
  • 500 ml Water
  • 0.5 Stück Bell pepper
  • 0.5 Stück Zucchini
  • 125 g Cherry tomatoes
  • 0.5 Stück Onion
  • 1 Stück Clove of garlic
  • 1 EL Olive oil
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 0.5 TL dried Thyme
  • 2 Stück Salmon fillet
  • Lemon juice
  • fresh Parsley

Cook Quinoa

Place 125 g of quinoa in the simmering basket and rinse with water. Add 500 ml of water to the mixing bowl, insert the simmering basket and cook for 15 min./100°C/level 4.

Prepare vegetables

While the quinoa is cooking, clean the peppers and cut into bite-sized pieces. Wash the zucchini and cut into pieces as well. Halve the cherry tomatoes.

Chop onion and garlic

Place 1/2 peeled onion and 1 clove of garlic in the mixing bowl and chop for 3 sec./level 5.

Sauté onion and garlic

Add 1 tbsp olive oil and sauté for 3 min./120°C/level 1.

Add and cook vegetables

10 min/212°F/Linkslauf Speed 1 212°F Reverse

Add peppers, zucchini and cherry tomatoes. Season with salt, pepper and 1/2 tsp dried thyme. Cook for 10 min./100°C/reverse rotation level 1.

Fry salmon

Fry 2 salmon fillets (125 g each) in a separate pan with a little olive oil until cooked through.

Add quinoa and salmon to the vegetables

Remove the simmering basket with the quinoa and add the quinoa together with the fried salmon to the vegetables in the mixing bowl. Heat for 2 min./90°C/reverse rotation level 1.

Season and serve

Drizzle with lemon juice and serve sprinkled with fresh parsley.
