Description

This savory cheesecake is an explosion of Mediterranean flavors! The base of crispy crackers blends perfectly with the cream of fresh cheeses and shrimp. A tasty and easy to prepare appetizer, perfect for a summer dinner or an aperitif with friends. I often prepare it when I have guests because it is always a success! The touch of fresh parsley and basil makes it even more fragrant and inviting. Try it, you won't regret it!

Ingredients (10 ingredients)

  • Crackers
  • Butter
  • 200 g Shrimp in brine
  • 200 g Spreadable cheese
  • 250 g Ricotta cheese
  • 50 g Grated cheese
  • 9 g Sheet gelatin
  • Fresh parsley
  • Cherry tomatoes
  • Basil

Preparation (6 steps)

Chop the parsley

Wash and dry a bunch of fresh parsley. Place the parsley in the bowl and chop for 3 Sec./Stufe 8. Transfer the chopped parsley to a bowl and set aside.

Prepare the cheese cream

In a large bowl, mix 250g of ricotta cheese, 200g of spreadable cheese and 50g of grated cheese until you get a homogeneous mixture. Set aside.

Dissolve the gelatin

Thermomix® Setting
2 min/122°F/Speed 2 50

Put 9g of sheet gelatin to soak in cold water for about 10 minutes. Squeeze the gelatin well and put it in the bowl with 30 ml of hot water. Dissolve the gelatin for 2 Min./50°C/Stufe 2.

Incorporate the gelatin into the cream

Pour the dissolved gelatin into the bowl with the cheese cream and mix gently to combine.

Add the shrimp and parsley

Drain 200g of shrimp in brine and add them to the cheese cream together with the chopped parsley. Mix gently to distribute the ingredients evenly.

Compose the cheesecake

Line the base of a springform pan with the crumbled crackers. Pour the cheese and shrimp cream into the mold and level the surface. Cover with plastic wrap and refrigerate for at least 30 minutes.
