Description

This savory onion cake from the baking sheet is an absolute classic and tastes simply delicious! I especially like to make it in the fall when the onions are freshly harvested. The dough is super easy and quick to prepare, and the filling with bacon, onions and crème fraîche is simply irresistible. The caraway seeds give the whole thing a special touch. Perfect for a hearty lunch, a cozy evening with friends or as a gift for the next party. It can also be prepared well and tastes warm or cold.

Ingredients (18 ingredients)

  • 300 g Flour Type 405
  • 150 g Low-fat quark
  • 70 ml Whole milk
  • 70 ml Vegetable oil
  • 1 packet Baking powder
  • 1 pinch Salt
  • 2000 g Onions
  • 5 piece Eggs Size M
  • 400 g Creme fraiche
  • 300 g Smoked streaky bacon
  • 50 g Butter
  • 3 tbsp Vegetable oil
  • 1 tbsp Whole caraway seeds, heaped
  • 1 tbsp Paprika powder, mild
  • 2 Prisen Salt
  • 2 Prisen Black pepper, ground
  • 2 Prisen Nutmeg, finely grated
  • Chives for garnish

Preparation (11 steps)

Prepare quark mixture

Thermomix® Setting
20 sec/Speed 3

Put 150 g low-fat quark, 70 ml whole milk and 70 ml vegetable oil into the mixing bowl and stir for 20 sec/speed 3.

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Add 300 g flour, 1 packet of baking powder and 1 pinch of salt to the quark mixture in the mixing bowl and process into a smooth dough for 2 min/kneading level.

Roll out and prepare dough

Remove the dough from the mixing bowl and roll it out thinly on a floured work surface, slightly larger than the baking sheet, with floured hands. Line the baking sheet with baking paper or grease it. Place the dough on the baking sheet and form an edge of approx. 1-1.5 cm. Set the baking sheet aside.

Preheat oven

Preheat the oven to 180°C top/bottom heat in good time.

Prepare onions

Peel and quarter 2 kg of onions. Place the quartered onions in the mixing bowl and chop for 5 sec/speed 5. If necessary, use the spatula to push down and repeat the process.

Prepare bacon

Cut 300 g of smoked streaky bacon into small cubes.

Sauté onions and bacon

Heat 50 g butter and 3 tbsp vegetable oil in a large pan. Briefly render the bacon cubes in it. Add the chopped onions, 1 pinch of salt, 1 pinch of pepper and 1 tbsp caraway seeds (optional) and sauté until translucent for approx. 10 minutes, turning several times.

Prepare egg-crème fraîche mixture

In a very large bowl, whisk 5 eggs with 400 g crème fraîche, 1 pinch of salt, 1 pinch of pepper, 2 pinches of grated nutmeg and 1 tbsp mild paprika powder with a whisk.

Mix in the onion mixture

Let the onion mixture steam off a little and then add it to the egg-crème fraîche mixture in the bowl. Mix everything together well.

Bake onion cake

Spread the mixture on the dough base and place the sheet on the middle rack in the preheated oven for approx. 35 minutes until the onion cake is golden brown.

Serve

Serve the onion cake warm or cold and garnish with chives as desired.
