Description

These lamb mince skewers with feta are an absolute highlight at any barbecue party! I've been making them for years and they're always a hit. The lamb mince is refined with garlic, crumbled sheep's cheese and aromatic spices such as coriander and cumin. An egg ensures the perfect binding. The skewers are quick to prepare and taste good both warm and cold. They go well with a fresh salad, flatbread and a creamy garlic yoghurt. Ideal for the barbecue season or as a hearty snack in between!

Ingredients (11 ingredients)

  • 500 g Lamb mince
  • 2 clove Garlic
  • 50 g Sheep's cheese
  • 0.5 tsp Coriander powder
  • 0.5 tsp Cumin powder
  • 3 tbsp Parsley, flat, chopped
  • 1 piece Egg(s)
  • 1 tbsp Turkish chili-paprika spice, alternatively cayenne pepper
  • to taste Salt
  • to taste Pepper
  • to taste Olive oil

Chop garlic

Put 2 cloves of garlic in the mixing bowl and chop for 3 sec./speed 7. Scrape down with the spatula.

Prepare mince mixture

Put 500 g lamb mince, the chopped garlic, 50 g crumbled sheep's cheese, 0.5 tsp coriander powder, 0.5 tsp cumin powder, 3 tbsp chopped parsley, 1 egg, 1 tbsp Turkish chili-paprika spice (or cayenne pepper), salt and pepper in the mixing bowl and knead for 2 min./kneading setting to form a homogeneous mass.

Form and fry skewers

Remove the mince mixture from the mixing bowl and use your hands to form small rolls. Put the rolls on skewers. Heat some olive oil in a pan and fry the skewers in it for about 10 minutes from all sides until they are cooked.

These lamb mince skewers with feta are a real hit in our house. I got the recipe a few years ago from a friend who lived in Turkey for a long time. He in turn got it from his Turkish mother-in-law. Since then, I have refined it again and again and adapted it to our taste. What I particularly like about it is the combination of the spicy lamb, the salty feta and the oriental spices. The lamb mince is of course the basis of the recipe. It should be of good quality and not too lean, otherwise it will quickly become dry. The feta, preferably a Greek sheep's cheese, provides a pleasant saltiness and a creamy texture inside the skewers. Coriander and cumin are the typical oriental spices that give the dish its characteristic taste. The parsley brings a fresh note and the Turkish chili-paprika spice (Pul Biber) provides a pleasant spiciness. If you don't like it so spicy, you can use cayenne pepper instead or leave out the spice altogether. The egg serves as a binding agent and ensures that the skewers do not fall apart during frying. The preparation in the Thermomix® is very simple. First, the garlic is finely chopped so that it mixes optimally with the mince. Then all the ingredients are placed in the mixing bowl and kneaded into a homogeneous mass. It is important to use the kneading setting so that the mince is not processed too much and becomes tough. The finished mince mixture should be well chilled before being formed into skewers. This makes it easier to process and prevents the skewers from falling apart during frying. I always form the skewers with moist hands, so the mince does not stick so much. If you don't like lamb, you can also use beef mince. Vegetarians can prepare the recipe with a mixture of lentils, rice and vegetables. Instead of feta, you can also use halloumi or goat cheese. There are no limits to the imagination when it comes to spices. Mint, oregano or thyme also go very well with lamb. The lamb mince skewers with feta taste best fresh from the grill or from the pan. They go well with a fresh salad, flatbread and a creamy garlic yoghurt. A dip of hummus or baba ghanoush is also a delicious side dish. If you like it a little more hearty, you can serve the skewers with rice or couscous. The finished skewers can be stored in the refrigerator and eaten cold the next day or reheated. The mince mixture can also be prepared and stored in the refrigerator. This saves time when preparing. The skewers can also be frozen well. However, they should be completely thawed before frying.
