Description

This kiwi-tomato-mozzarella salad is a refreshing and colorful variation of the classic Caprese. The sweetness of the kiwi harmonizes wonderfully with the juicy tomatoes and the creamy mozzarella. A light balsamic dressing perfectly rounds off the dish. I love making this salad in the summer when the ingredients are particularly aromatic. It is quick to prepare and is ideal as an appetizer or light main course. If you like, you can sprinkle a few roasted pine nuts over it. A real treat!

Ingredients (14 ingredients)

  • 3 piece Green Kiwi - peeled and sliced in approx. 2-3 mm slices
  • 500 g Tomatoes - sliced
  • 125 g Ball of Mozzarella or Buffalo Mozzarella - torn into small pieces
  • 2 tbsp Olive oil
  • 20 Blätter Basil, fresh - washed and dried
  • to taste Sea salt
  • to taste coarse black Pepper
  • 1 piece Green Kiwi - peeled
  • 2 tbsp Olive oil
  • 1 tbsp white Balsamic vinegar
  • 1 tbsp Lemon juice
  • 2 tsp Honey
  • to taste Salt
  • to taste Pepper

Preparation (6 steps)

Prepare tomatoes and kiwi

Cut the tomatoes and peeled kiwi into slices. The tomato slices should be about the same thickness as the kiwi slices.

Arrange salad

Arrange the tomato slices on a plate. Drizzle with 2 tbsp olive oil, season with sea salt and coarse black pepper, and top with the kiwi slices.

Add mozzarella and basil

Tear the mozzarella into small pieces with your fingers and place it over the salad together with the washed and dried basil leaves.

Prepare kiwi dressing

Thermomix® Setting
20 sec/Speed 8

Put the peeled kiwi, 2 tbsp olive oil, 1 tbsp white balsamic vinegar, 1 tbsp lemon juice, 2 tsp honey, salt and pepper in the mixing bowl and puree for 20 sec./speed 8.

Taste dressing

Taste the kiwi dressing and season with salt and pepper if necessary.

Serve salad with dressing

Spread the kiwi dressing over the salad in spots and serve immediately.
