Description

This game broth with pancake strips and tender spider steak is a real highlight for special occasions! I especially like to make it in autumn and winter when it's game season. The spider steak, also called Kachelfleisch, is an often forgotten but very tender part of the game. The broth simmers for hours with game bones, root vegetables and fresh herbs, giving it an intense flavour. The homemade pancake strips round off the dish perfectly. A hearty and warming dish that is guaranteed to impress!

Ingredients (10 ingredients)

  • 2 piece Spider steak, from the young wild boar
  • 1000 Gramm Game bones
  • 1 Bündel Root vegetables
  • 1 Bündel Fresh herbs, parsley, chives, lovage
  • 1 x Vegetable onion
  • 350 Gramm Spelt flour
  • 4 x Eggs
  • 500 Milliliter Milk
  • 1 Bündel Chives
  • 1 x Salt and pepper

Preparation (12 steps)

Roast game bones

Roast the game bones on the grill until they are well browned. Divide longer bones with a blow to the back of the knife blade.

Prepare game broth

180 min/212°F/Speed 1 100

Place the roasted game bones in the mixing bowl and fill with 3 litres of cold water. Close the mixing bowl and simmer for 180 Min./100°C/speed 1. Use a spoon to skim off any foam and flocculated protein during this time so that the broth remains clear.

Prepare soup vegetables

Peel the root vegetables and roast without adding any fat. Then cut into small pieces/strips.

Add soup vegetables and herbs

Thermomix® Setting
60 min/212°F/Speed 1 100

Add the prepared soup vegetables, parsley and lovage to the mixing bowl. Season with 20g salt and simmer for a further 60 Min./100°C/speed 1.

Strain broth

Strain the broth through a kitchen towel and return to the mixing bowl.

Prepare pancake batter

Thermomix® Setting
20 sec/Speed 4

Add 350g spelt flour, 500ml milk, 4 eggs, 2 teaspoons of salt and a pinch of pepper to the mixing bowl and mix for 20 sec./speed 4. There should be no lumps in the batter, if necessary use the spatula to scrape from the edge and mix for a further 10 sec./speed 4.

Add chives

Thermomix® Setting
5 sec/Speed 3

Wash a bunch of chives, chop finely and add to the mixing bowl. Stir in for 5 sec./speed 3. Leave the dough to rest in the fridge for half an hour.

Bake pancakes

Heat clarified butter in a coated pan and bake thin pancakes one after the other. Then cut into thin strips.

Prepare spider steak

Lightly salt the spider steak and leave to rest at room temperature for half an hour.

Fry spider steak

Briefly fry the spider steak in a hot pan with a little oil on both sides until it reaches the desired doneness. Then cut into thin slices.

Add pancake strips to the broth

Add the sliced pancake strips to the hot broth in the mixing bowl and heat for 5 Min./80°C/Reverse speed speed 1.

Fill the game broth with pancake strips into bowls and garnish with the slices of spider steak. Serve immediately.

I have refined the recipe over the years, inspired by traditional game dishes from my grandmother, who was a passionate hunter herself. The combination of the deep, earthy broth, the tender pancake strips and the juicy spider steak is simply unbeatable. The game bones form the basis for the intense flavour of the broth. Roasting them beforehand on the grill develops roasted aromas that give the broth a special depth. The root vegetables – carrots, celery, leek and parsley root – contribute sweetness, spice and a pleasant texture. The fresh herbs, especially parsley and lovage, bring an aromatic freshness to the dish. The vegetable onion provides a slight spiciness and rounds off the taste. The spider steak, also called Kachelfleisch, is an often underestimated part of the game. It is particularly tender and juicy as it is heavily marbled. When preparing the broth in the Thermomix®, it is important to simmer the bones for long enough so that the flavour can fully develop. Skimming off the foam and protein during cooking ensures a clear broth. The soup vegetables should only be added later so that they do not become too soft. The pancake strips are a classic accompaniment to broths and soups. The dough should rest for half an hour before baking so that the flour can swell and the pancakes become nice and thin and elastic. When baking the pancakes, it is important not to let the pan get too hot, otherwise they will burn quickly. For a vegetarian version, you can replace the game bones with vegetable bones or a mixture of mushrooms and smoked tofu. Fried mushrooms or smoked tofu cubes are an excellent alternative to spider steak. You can vary the spices to taste. Juniper berries, bay leaves or allspice berries give the broth an extra spice. The game broth with pancake strips and spider steak can be served as a starter or as a main course. Fresh farmhouse bread or a salad goes well with it. You can also prepare the broth well in advance and store it in the refrigerator. However, the pancake strips should only be added to the broth shortly before serving, as they will otherwise become too soft. The spider steak can also be prepared and fried briefly before serving.
