Quick puff pastry vanilla pudding pieces are prepared in no time with the Thermomix®. The main ingredients are puff pastry, vanilla pudding powder, milk and sugar. This simple dessert is ready in about 35 minutes and makes one serving. Ideal as a quick snack in between or as a sweet ending to a light lunch. Perfect for those who have little time and still don't want to miss out on a delicious dessert.

Ingredients (6 ingredients)

  • 40 g Sugar
  • 1 Pck. Vanilla pudding powder
  • 400 ml Milk
  • 1 Pck. Puff pastry (from the refrigerated section)
  • 1 tbsp Powdered sugar
  • 1 piece Egg white

Preparation (7 steps)

Mix pudding powder

Put 50 g sugar, 1 pack vanilla pudding powder and 6 tbsp milk into the mixing bowl.

Stir pudding powder

About this recipe

These puff pastry vanilla pudding pieces are a recipe that I learned from my grandma, but in a much simplified version for the Thermomix®. Grandma always cooked the pudding herself, standing at the stove for hours. The Thermomix® makes the whole thing much faster and easier without sacrificing the taste. It is a piece of childhood memory that I would like to share with you. The list of ingredients is deliberately kept simple. The puff pastry from the refrigerated section is the key to speed. Make sure to choose a puff pastry with butter, as it tastes much better than variants with vegetable fat. The vanilla pudding powder provides the typical vanilla note and the creamy consistency. Here you can of course also use higher quality variants, for example with real Bourbon vanilla. The milk is the basis for the pudding, whole milk provides a richer taste, but low-fat milk also works well. The sugar controls the sweetness, here you can vary according to taste. The egg white is only used to brush the puff pastry before baking to give it a beautiful golden brown color. The preparation with the Thermomix® is very simple. It is important that you make sure that no lumps form when mixing the pudding powder. The Thermomix® does this reliably, but a quick look doesn't hurt. When cooking the pudding, the temperature of 90°C is important so that the pudding does not burn. Be sure to let the pudding cool down after cooking before putting it on the puff pastry, otherwise it will soften. While the pudding is cooling, you should stir it occasionally to prevent a skin from forming. Brushing the puff pastry with egg white before baking ensures a beautiful color and a light shine. The recipe is already suitable for a vegetarian version. A vegan version is a bit more difficult, as puff pastry often contains butter. Here you have to pay attention to a vegan puff pastry. The egg white for brushing would also have to be replaced, here you could use some vegetable milk, for example. You can experiment with different spices in terms of taste. A pinch of cinnamon or cardamom in the pudding provides a wintery note. Also some lemon or orange zest fits perfectly. The puff pastry vanilla pudding pieces taste best fresh from the oven, when the puff pastry is still crispy and the pudding is warm. A glass of cold milk or a cup of coffee goes well with it. If you like it a little more fruity, you can serve the pieces with fresh berries. A scoop of vanilla ice cream also goes perfectly with it. The finished pieces are best eaten immediately, as the puff pastry will otherwise become soft. If you still want to store them, you should store them in an airtight container in the refrigerator. They will then keep for about 1-2 days. You can also prepare the pudding the day before and store it in the refrigerator. This saves you time the next day.
