Description

Fine hazelnut spritz cookies from the Thermomix® are a classic for the Christmas season. With just a few ingredients like butter, sugar, eggs and flour, these cookies are quick and easy to make. The total preparation time is 75 minutes, including 45 minutes of active time. This recipe makes about 60 servings. Ideal as finger food or a sweet ending for festive occasions and cozy winter days.

Ingredients (10 ingredients)

  • 250 g soft butter
  • 325 g sugar
  • 1 Pck. vanilla sugar
  • 2 eggs
  • 75 ml milk
  • 1 Prise(n) salt
  • 500 g wheat flour Type 405
  • 1 TL baking powder
  • 200 g ground hazelnuts
  • 150 g dark chocolate couverture

Preparation (7 steps)

Cream butter, sugar and vanilla sugar until light and fluffy

Place 250 g of soft butter, 325 g of sugar and 1 packet of vanilla sugar in the mixing bowl and mix for 2 min./speed 4 until light and fluffy.

Add eggs, milk and salt

Add 75 ml of milk, 2 eggs and 1 pinch of salt to the mixing bowl and mix for 30 sec./speed 3.

Mix flour, baking powder and hazelnuts and stir in

Mix 500 g of wheat flour Type 405 and 1 tsp of baking powder in a separate bowl. Add 200 g of ground hazelnuts and mix. Add the flour mixture to the mixing bowl in portions and mix for 1 min./speed 3. If necessary, use the spatula to help.

Chill dough

Remove the dough from the mixing bowl, form into a ball, wrap in plastic wrap and refrigerate for 30 minutes.

Shape and bake spritz cookies

Preheat the oven to 175 °C top/bottom heat. Fill the dough in portions into a piping bag with a star nozzle and pipe cookies onto a baking sheet lined with baking paper as desired. Place the cookies with some space between them. Bake in the preheated oven for 12-15 minutes until golden brown.

Melt couverture

Place 150 g of dark chocolate couverture in pieces in the mixing bowl and melt for 4 min./50°C/speed 2.

Decorate spritz cookies with couverture

Dip the cooled spritz cookies halfway into the melted couverture, place on baking paper and let dry.
