Description

This aromatic chicken with caper and lemon sauce is a dish that I often prepare when I want something tasty but not too complicated. The combination of capers, mint and lemon creates a fresh and lively sauce that goes perfectly with the chicken. The scent of sage, inserted between the skin and the meat, makes it all even more inviting. Perfect for a family dinner or with friends, this dish is a real success. The preparation is quick and easy, also ideal for those who have little time available. A touch of the Mediterranean that brings joy to the table!

Ingredients (10 ingredients)

  • 4 piece Chicken quarters
  • 50 g Capers in vinegar
  • 10 foglia Sage
  • 10 foglia Fresh mint
  • 1 clove Garlic
  • 0.5 piece Lemon zest
  • 50 ml Extra virgin olive oil
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 500 ml Water

Preparation of the chicken

Take the chicken quarters and clean them carefully from any residual fluff. Gently lift the skin from the pulp to create space for the aromas.

Flavoring the chicken

Insert a few sage leaves between the skin and the meat of the chicken. Salt and pepper the surface of the chicken quarters to taste.

Cooking the chicken

Thermomix® Setting
50 min/Varoma/Speed 1 Varoma

Arrange the chicken quarters in the Varoma. Pour 500 ml of water into the bowl. Close the Varoma and cook for 50 min./Varoma/speed 1.

Preparation of the caper sauce

In the clean bowl, insert 50g capers in vinegar, 10 fresh mint leaves, a pinch of black pepper, 1 clove of garlic cut into pieces and the grated zest of half a lemon. Add a pinch of salt and chop for 5 Sec./speed 7.

Emulsification of the sauce

Thermomix® Setting
10 Sec./Speed 3

Add 50 ml of extra virgin olive oil to the bowl and mix for 10 Sec./speed 3. Check the density of the sauce and, if necessary, add more oil until you reach the desired consistency.

Service

Once the chicken is cooked, sprinkle it with some of the cooking juices present in the Varoma. Plate the chicken quarters and add the caper sauce on the surface. Serve hot.
