Description

This dish is an absolute harbinger of spring! The fresh ramson gives the creamy salmon sauce a wonderful note. I especially like to make this salmon-ramson sauce with spaghetti when I need something quick, but still want something special on the table. The preparation is straightforward and the Thermomix® helps to get the sauce perfectly creamy. The salmon is fried in the pan to develop roasted aromas, which make the dish even more delicious. A dash of white wine rounds off the whole thing. Simply delicious!

Ingredients (13 ingredients)

  • 200 g Wild salmon fillet
  • 3 Spring onions
  • 0.5 Organic lemon
  • 1 Handvoll Ramson
  • 1 Handvoll Cocktail tomatoes
  • 100 ml Cream
  • 50 ml White wine
  • 50 ml Vegetable broth
  • 1 tbsp Oil
  • 1 tsp Sugar
  • Salt
  • Pepper
  • 150 g Spaghetti

Preparation (8 steps)

Cook spaghetti

Cook spaghetti al dente in salted water according to package directions. In the meantime, continue with the recipe.

Prepare salmon

Cut 200 g wild salmon fillet into cubes and drizzle with the juice of half an organic lemon. Season with salt and pepper.

Chop spring onions

Cut 3 spring onions into rings and set aside.

Fry salmon

Heat 1 tbsp neutral oil in a coated pan. Fry the prepared salmon cubes and the spring onion rings in it for about 5 minutes until the salmon is cooked.

Prepare sauce

Deglaze the fried salmon and spring onions with 50 ml white wine and let it reduce briefly. Add 100 ml cream and 50 ml vegetable broth.

Season sauce

Season the sauce with pepper, salt and 1 tsp sugar.

Add ramson and tomatoes

Cut 1 handful of ramson into strips and add to the sauce together with 1 handful of halved cocktail tomatoes. Simmer everything for about 5 minutes.

Arrange

Arrange spaghetti on plates and pour the salmon-ramson sauce over it. Serve immediately.

This salmon-ramson sauce with spaghetti is a real spring dish for me, which I discovered a few years ago in a small restaurant on the Baltic Sea. The combination of the tender salmon, the spicy ramson and the creamy sauce immediately impressed me. I then re-cooked the recipe at home and refined it over time until it was the way I liked it best. The Thermomix® is a great help because it makes the sauce particularly creamy and perfectly combines the flavors. The wild salmon is of course the star of the dish. It brings a delicate, slightly oily taste and a tender texture to the sauce. When buying, pay attention to good quality, because that really makes a difference. The spring onions provide a mild spiciness and a fresh note. The ramson, which is only in season in spring, is the special highlight. It gives the sauce an intense, garlic-like aroma that goes perfectly with the salmon. The cocktail tomatoes bring a fruity sweetness and a slight acidity into play, which balances the dish wonderfully. For preparation with the Thermomix®, I recommend chopping the spring onions and the ramson in it first, before the salmon is fried in the pan. This saves time and ensures that the flavors are optimally released. After the salmon has been fried and deglazed with white wine, the sauce can be finished in the Thermomix®. The cream and vegetable broth are added and the whole thing is stirred creamy at a low temperature. Finally, add the tomatoes and the ramson, which only need to simmer briefly so that they do not become too soft. If you like it vegetarian, you can replace the salmon with smoked tofu. This should then also be cut into cubes and fried. For a vegan version, you can use a plant-based cream alternative instead of cream. You can also vary the spices. Some dill or lemon pepper go perfectly with the salmon. The salmon-ramson sauce with spaghetti tastes best when it is freshly prepared. A green salad or a few toasted slices of bread go well with it as a side dish. If you like, you can refine the dish with some freshly grated Parmesan or a squeeze of lemon juice. Leftovers of the sauce can be stored in the refrigerator and reheated the next day. However, the ramson loses some of its aroma. You can also prepare the sauce and store it in the refrigerator until the ramson and tomatoes are added. Shortly before serving, the fresh ingredients are added and the sauce is heated.
