Description

These wild rabbit skewers in flatbread are a real highlight for every barbecue evening! The tender rabbit meat, wrapped in hearty wild boar bacon, harmonizes perfectly with the fruity-sweet orange marinade. I like to make the recipe in autumn, when the game tastes particularly good. The preparation is a bit more complex, but the result is simply delicious. A great dish for those who are looking for something special and love the taste of game.   • 3 x Rabbit legs, ready to cook
  • 40 slice Bacon
  • 10 x Cherry tomatoes
  • 1 Esslöffel Orange marmalade
  • 1 Esslöffel Mustard
  • 1 x Juice of one orange
  • 1 Teelöffel Honey
  • 1 Bündel Leaf spinach
  • 4 x Pita, flatbread
  • 2 x Red onions
  • 1 x Salt
  • 1 x Pepper
  • 1 x Sugar

Prepare marinade

Put the juice of half an orange, a handful of cherry tomatoes (approx. 5 pieces), 1 tablespoon of mustard, 1 teaspoon of honey, 1 tablespoon of orange marmalade, salt and pepper into the mixing bowl and process into a fine pulp for 20 seconds/speed 8.

Prepare rabbit meat

Debone the rabbit legs and remove as much silverskin as possible. Cut the meat into bite-sized pieces. Season with salt and a little sugar.

Assemble skewers

Wrap the pieces of meat with the bacon and put them on skewers.

Prepare onions

Peel the red onions and cut into rings.

Grill rabbit skewers

Roast the rabbit skewers all around on the grill over direct heat until they are crispy. Now brush with the marinade and cook for another eight to ten minutes over indirect heat. Cut the meat lengthwise from the skewer.

Warm up flatbreads

Warm up the pita breads. This can be done in the oven or in a pan.

Fill flatbreads

Halve the remaining cherry tomatoes and fill the flatbreads with the fresh spinach, onion rings, game and one or two teaspoons of the marinade.

About this recipe

The idea for these wild rabbit skewers came to me on a cold autumn evening. I had a rich hunting yield and wanted to conjure up something special from it, something that captures the aromas of the forest and is also uncomplicated enough for a convivial gathering. I still had flatbreads in the freezer, and so this combination of hearty game, fruity marinade and fresh ingredients was created. The rabbit legs are the heart of the dish. They provide the tender, slightly sweet game that is so characteristic of autumn. It is important to carefully debone the legs and remove the silverskin, as they can become tough when grilled. The wild boar bacon, with which the pieces of meat are wrapped, provides additional juiciness and a smoky taste that harmonizes perfectly with the game. The orange marmalade in the marinade brings a fine sweetness and a slightly bitter note that wonderfully underlines the taste of the game. The mustard provides a pleasant spiciness, the honey for an additional sweetness and the orange juice for a fruity acidity that balances the dish. The Thermomix® is a real helper here, especially when preparing the marinade. The cherry tomatoes that I use for the marinade give it a fruity note and a slight acidity. In the Thermomix®, they are processed together with the other ingredients into a fine, homogeneous sauce. Make sure not to mix the marinade for too long, as it can otherwise get too hot. When seasoning the meat, less is often more. A little salt and a pinch of sugar are enough to highlight the inherent taste of the game. For a vegetarian version, you could cut halloumi cheese into bite-sized pieces and use it instead of the rabbit meat. A vegan version would be conceivable with marinated tofu. You can vary the spices as you wish. Thyme, rosemary or juniper berries go perfectly with game dishes. It is best to serve the wild rabbit skewers in flatbread warm. A dollop of yogurt-mint sauce or a fresh salad go perfectly with it. A glass of red wine also rounds off the taste experience. You can easily store the remaining skewers in the refrigerator and warm them up the next day. The marinade will also keep for a few days in the refrigerator. You can also prepare and freeze the skewers. So you always have a quick and tasty meal at hand.
